“The enzyme is the important thing. In the Eastern medicine, the Chinese physicians, they call it ‘Chi.’ Chi is the life force. I think in Yoga language, they call it ‘Prana.’ It’s the same thing. And I only recently learned there are something like seven to ten types of Chi. I didn’t know that, so that was new. So, anyway fruit, its life is rich in Chi, so that’s why we want to preserve that. And also after soaking them for 12 hours, it goes up. Many of the nutrients actually go up. Mung beans, the green beans we eat, when we sprout them, some of the vitamins actually go up 600%. So, it’s the same with many other nuts.”
